A Recipe a Week

I've started a project to try one new recipe each week and document it. I'm also posting links to recipes I want to try. The result is a nice little online cookbook of my favorite recipes!

Paleo fruit tart! Turned out great!  Added kiwi, blueberries, and lemon zest to this: http://deliciouslyorganic.net/strawberry-tart/
Next time I would roll out the dough to make a thinner tart base, and use less sugar. Also I might like to try the lemon tart next time: http://deliciouslyorganic.net/lemon-tart-apricot-lane-farms/

Bruschetta!  This was so easy and SO good! I just put it on little toast crackers instead of the bread, and added some garlic salt to the mix.  Also tasted just like gazpacho the next day.  http://www.taste.com.au/recipes/22534/tomato+and+basil+bruschetta

Balsamic Flat Iron Steak - the components were tasty separately but didn’t actually go together that much.  Also the onions weren’t that great because the flavor from the coconut oil I used overpowered them. http://peaceloveandlowcarb.com/2013/01/balsamic-flat-iron-steak-salad-low-carb-gluten-free-paleo-dairy-free-whole30.html

Chipotle Chili - yum yum yum!  Delicious but doesn’t actually taste that different from what you get when you make taco meat with a packet of seasoning.  http://on.fb.me/1pNzW6I

Spaghetti Squash!

I found spaghetti squash, a.k.a. vegetable spaghetti, at Vic Markets!  I followed this recipe and it turned out well, as did the meatballs: http://primalblissnutrition.com/2013/05/teeny-tiny-meatballs-marinara-and-spaghetti-squash/

Blueberry Pancakes

Recipe from Primally Inspired: http://www.primallyinspired.com/grain-free-coconut-flour-blueberry-pancakes/

Taste way better than they look.  I think they were dark and just a little watery because I used frozen blueberries which get a little runny.  I used 1 tbsp each of maple syrup and honey as sweetener.  They were so delicious.  Definitely a winner recipe!  Next time I might thaw and drain the blueberries, or use fresh ones when they’re in season.

Southwestern Frittata

Recipe from The Primal Food Blog:

http://theprimalfoodblog.wordpress.com/2013/04/10/paleoprimal-southwestern-frittata/

I used less chilli powder but more cumin, and of course more cheese.  So, so delicious.  Time consuming but fairly simple.  Will definitely cook again or try a different twist on it.

Egg Muffins!

I am so chuffed with these delightful little muffins! I used this recipe: http://www.freecoconutrecipes.com/index.cfm/2011/9/21/gluten-free-bacon-egg-and-cheese-muffins  and added some spinach and chopped tomatoes. I also didn’t have baking powder but I was able to use some baking soda and activated it with a bit of yogurt as the acidic substance, based on these instructions:  http://www.wikihow.com/Make-Substitute-Baking-Powder
