A Recipe a Week

I've started a project to try one new recipe each week and document it. I'm also posting links to recipes I want to try. The result is a nice little online cookbook of my favorite recipes!

Spaghetti Squash!

Blueberry Pancakes

Taste way better than they look.  I think they were dark and just a little watery because I used frozen blueberries which get a little runny.  I used 1 tbsp each of maple syrup and honey as sweetener.  They were so delicious.  Definitely a winner recipe!  Next time I might thaw and drain the blueberries, or use fresh ones when they’re in season.

Southwestern Frittata

I used less chilli powder but more cumin, and of course more cheese.  So, so delicious.  Time consuming but fairly simple.  Will definitely cook again or try a different twist on it.

Egg Muffins!

I am so chuffed with these delightful little muffins! I used this recipe: http://www.freecoconutrecipes.com/index.cfm/2011/9/21/gluten-free-bacon-egg-and-cheese-muffins  and added some spinach and chopped tomatoes. I also didn’t have baking powder but I was able to use some baking soda and activated it with a bit of yogurt as the acidic substance, based on these instructions:  http://www.wikihow.com/Make-Substitute-Baking-Powder

Horrible green curry chicken

Tastes way worse than it looks.  The chicken and veggies were nice but the sauce was gross, simultaneously watery and too hot.

I followed the recipe on the Mae Ploy Green Curry Paste packet, just with extra meat and veg. No use sharing because I’ll never make it again!  I might try it from scratch using a recipe from shesimmers.com.

Paleo walnut brownie muffins

I used this recipe from Slim Palate and added walnuts to the batter and also sprinkled them on top.

They were delicious, and a bit fluffly and cake-like.  I usually prefer a brownie that’s gooey in the middle and flaky on top, and I got that with this almond butter brownie recipe from Health Bent, so it will be my go-to from now on:

Paleo Snickerdoodles
Yum yum yum!  I used this recipe:

The only difference is that I used coconut sugar and cinnamon for the rolling mixture.  They turned out beautifully and were easy and delicious!

Slow cooker beef and broccoli

Yikes.  This is a pretty gross photo.  The sauce turned out pretty gross too, I’ll be honest.  The only redeeming quality was that the beef was lovely and tender from the slow cooker.  I’ll be using a different recipe next time.

Tomato olive & mozzarella focaccia
I used this recipe from Gourmande in the Kitchen: http://gourmandeinthekitchen.com/2012/tomato-olive-thyme-focaccia-bread-gluten-grain-free/
I couldn’t find fontina cheese so I used all parmesan.  Also the recipe called for fresh thyme but the store was out, so I used dried thyme and the flavor is so strong you don’t need as much as the recipe called for.  This baked up in less than 15 minutes and was moist, fluffy and very tasty!  I am actually used to focaccia being dense and somewhat dry so it wasn’t what I expected, but it was still good.  I might try adding some flaxseed or almond meal to make it denser next time.

Leftover sausage transformation!
I used my leftover breakfast sausage here and it worked well!  I made zucchini noodles again, this time salting them and sitting them in a mesh strainer over a bowl.  LOTS of water came out and this was much easier to do than sitting them on paper towels, which was a mess last time.  I gave them a nuke in the microwave and squeezed them over the strainer again and that got rid of lots of water.  I used a store-bought spaghetti sauce that didn’t have any sugar, and grated some parmesan.  Easy and delicious!

I forgot to get sage at the grocery store, whoops!  The resulting sausage patties were still very tasty.  I experimented with the size at first and when they were about the size of a slider they were close to burning before the middle was getting cooked through.  Once I made them small enough they cooked nicely.  It also helps to have some coconut oil in the pan when cooking them up.

Cooking Class: White Chocolate Mousse!

KA and I made this, and it was magnificent.  We used figs instead of plums, and didn’t have vanilla extract, but it was still delicious.  It turned out more like a custard than a mousse, though, and the chef said more gelatin would have fixed that.
